This is one very popular sauce in Ghana and some part of Africa and is usually eaten with rice, yam, plantain etc.. . Tomato is the main food item used in stews.

Ingredients

  • 5 large onion
  • 2 tins of tomatoes plums
  • 1kg Beef/Goat meat/Chicken/Turkey
  • 1tsp oregano
  • cooking oil
  • salt and seasons of choice
  • 1 or 2 scotch bonnet pepper
  • 5 cloves
  • 15g ginger
  • 4 tbsp ginger,garlic paste

Directions

  • 1Wash the meat and season it with oregano, salt, maggi cube of your choice and 4 tbsp of blended ginger,garlic paste (see ginger garlic onion and pepper paste recipe)
  • 2Cook it for about 40 minutes or until the meat is soft
  • 3Cut 3 onions into big pieces and fry with 1/2 cup of oil till glaze golden brown remove and set apart
  • 4Blend the tomato plums with one onion, pepper and ginger
  • 5Add the already fried onions to the tomatoes and blend it together
  • 6Cut the remaining onion and fry with 1 cup of cooking oil till glaze brown
  • 7Add the blended tomatoes mixture to the onions on fire
  • 8Stir and allow to cook for about 30 minutes
  • 9Add the steamed meat with the stock to the stew and allow to cook on medium heat
  • 10Allow the stew to cook for about 30 more minutes on a lower heat
  • 11Taste and add seasons again if desired
  • 12Serve with rice
