Ingredients

  • 1 large tilapia
  • 2 stems of parsley
  • 1 thumb size ginger
  • 1 habanero pepper
  • 4 cloves of garlic
  • 1 shrimp cube and salt to taste
  • 1/4 cup of oil of your choice
  • 1/2 onion
  • 2 stems of spring onions
  • 1 red, green and yellow bell pepper cut in rings
  • OPTIONAL
  • 1 medium onion cut in rings
  • 1 tomato unseeded and cut in rings
  • 1 stem curly parsley finely chopped
  • 1/4 cup vinegar
  • 1/2 cup water
  • Salt to taste
  • Mix everything together and let rest till ready to use

Directions

  • 1Clean the tilapia and remove the gills and fins if possible
  • 2Make 2 diagonal cuts on each side of the fish and dry it a bit with paper towel
  • 3In a blender, blend all the vegetable ingredients, add the cube and salt and blend again
  • 4In a small bowl pour the blended ingredients and add the oil to make a mixture. Taste and if necessary add salt and maggi cube again according to your taste
  • 5Rub the mixture on the fish and rub it also in the cuts and inside the fish
  • 6Cover the marinated fish for at least 40 minutes or more
  • 7Preheat the oven on 200C
  • 8Grill the fish in a preheated oven for 20 minutes
  • 9Remove the fish and flip sides and brush with some marinade and grill it for 20 minutes.
  • 10Serve with fried plantain.
